Growing up in Sussex meant for us as chefs, we got to appreciate the high quality of produce locally grown all around us. From ‘pick your own’ farms to foragers and small businesses, making the most of what the South East farms and landscapes provide.
By using local businesses and their produce, the quality is higher and its more sustainable. We adapt our menus weekly to what’s best in season and aim to minimise wastage by using as much of each ingredient as we can.
